There is no greater reward for a successful season than bringing a prime cut of venison into your home kitchen. For many hunters, the backstrap—the tender, long muscle running along the spine of the deer—is the crown jewel of the animal. Because this muscle does very little work during the deer’s life, it is incredibly tender and mild. However, due to its lack of internal fat, it is also the easiest cut to ruin if not treated with the proper respect. The Secret to Perfect Venison

When cooking wild game, the most common mistake is overcooking. Venison is exceptionally lean, and once you push it past medium-rare, the moisture evaporates, leaving behind a dry, liver-like texture. To avoid this, you must rely on a digital meat thermometer rather than guesswork. Additionally, proper temperature management is key. By bringing the meat to room temperature before it hits the pan, you ensure a more even sear without turning the center gray.

Ingredients

  • 1 whole venison backstrap (cleaned of silver skin)
  • 2 tablespoons high-smoke point oil (grapeseed or avocado oil)
  • 3 tablespoons unsalted butter
  • 3 cloves of garlic, smashed
  • 2 sprigs of fresh rosemary
  • 1 cup dry red wine (Cabernet Sauvignon or Merlot)
  • 1/2 cup beef stock or high-quality venison bone broth
  • 1 shallot, finely minced
  • Kosher salt and coarse black pepper

Instructions for Success

1. Preparation is Key

Remove the backstrap from the refrigerator 30 to 45 minutes before cooking. Pat the meat completely dry with paper towels; moisture is the enemy of a good crust. Season liberally with salt and pepper on all sides.

2. The Hard Sear

Heat your cast-iron skillet over medium-high heat until it is smoking slightly. Add your oil. Once the oil is shimmering, gently lay the backstrap into the pan. Do not move it for at least 3 minutes. You are looking for a deep, dark brown sear. Rotate and repeat until all sides are browned.

3. The Butter Baste

Turn the heat down to medium. Add your butter, smashed garlic, and rosemary sprigs to the pan. Once the butter is foaming, use a large spoon to tilt the pan and baste the backstrap continuously with the garlic-infused butter for the final 2 minutes of cooking. This adds richness that replaces the fat lost during the lean cooking process.

4. Reaching the Finish Line

Remove the backstrap from the pan when the internal temperature reaches 125°F to 130°F for a perfect medium-rare. Transfer it to a cutting board and cover loosely with foil. Let it rest for at least 10 minutes. This step is non-negotiable; resting allows the juices to redistribute throughout the meat.

5. Creating the Red Wine Reduction

While the meat rests, keep the skillet over medium heat. Toss in the minced shallots and sauté until translucent. Pour in the red wine, scraping up the browned bits (the fond) from the bottom of the pan with a wooden spoon. Reduce the liquid by half, then whisk in your stock. Simmer until the sauce thickens enough to coat the back of a spoon. Finish by swirling in a cold knob of butter for a glossy sheen.
