However, because their breast meat is exceptionally lean and small, it is notoriously easy to dry out. The secret to success lies in understanding the meat’s properties and using techniques that add fat and moisture back into the protein.

Ingredients for Success

To craft the ultimate dove popper, you need quality components that complement the gamey notes of the dove without overpowering them:

  • 10-12 fresh dove breasts (bone-in or deboned, depending on your preference)
  • 6-8 strips of thick-cut, high-quality bacon (cut in half)
  • 1 block of full-fat cream cheese, softened
  • 2 fresh jalapeño peppers, seeded and sliced into thin strips
  • 1 tablespoon of your favorite BBQ rub or a simple blend of garlic powder, onion powder, and black pepper
  • Toothpicks (soaked in water for 30 minutes to prevent burning)

1. Preparation and Brining

Start by ensuring your dove breasts are thoroughly cleaned and free of any lead shot or feather debris.
