After spending hours studying and finally making the shot, the culinary payoff is the ultimate conclusion to the hunt. The venison tenderloin—often called the filet mignon of the deer—is a prized cut that deserves respect. Because it is incredibly lean and tender, it is easy to ruin if treated like a tough rump roast. This guide will help you prepare this delicacy with the care it deserves.
Why Tenderloin Matters
The tenderloin is a long, narrow strip of meat located on the inside of the body cavity, tucked against the spine. Unlike the muscles of the hindquarter, which get plenty of exercise, the tenderloin is a non-weight-bearing muscle. This means it has very little connective tissue, making it the most tender cut on the animal. However, its lack of fat also means it has very little margin for error. If you overcook it, you lose that signature buttery texture.
The Ingredients
- 1 fresh venison tenderloin (silver skin removed)
- 2 tablespoons high-smoke point oil (grapeseed or avocado oil)
- 3 tablespoons unsalted butter
- 3 cloves of smashed garlic
- 2 sprigs of fresh rosemary or thyme
- Kosher salt and freshly cracked black pepper
The Process: Step-by-Step
1. Preparation is Key
Before you even think about the heat, ensure your meat is properly prepped. Use a sharp fillet knife to remove the thin, white silver skin. If you leave this on, it will become tough and chewy during the cooking process. Once cleaned, pat the meat completely dry with paper towels. Moisture is the enemy of a good sear; if the meat is wet, it will steam rather than brown.
2. Temper the Meat
Take the tenderloin out of the refrigerator 30 to 45 minutes before you start cooking. Bringing the meat closer to room temperature ensures an even cook from the outside to the center, preventing a cold, raw core while the exterior is perfectly browned.

3. The Perfect Sear
Season the tenderloin liberally with kosher salt and pepper. Heat a cast-iron skillet over medium-high heat until the pan is hot. Add the oil. Once it shimmers, carefully place the tenderloin in the pan. Sear it undisturbed for about 2–3 minutes per side. You are looking for a deep, rich brown crust.

Once the tenderloin is browned on all sides, turn the heat down to medium. Toss in your butter, smashed garlic, and herbs. As the butter melts and begins to foam, tilt the pan slightly and use a spoon to continuously baste the meat with the hot, herb-infused butter. This adds fat back into the lean meat and provides incredible flavor depth.
5. Check the Temp
Venison is best served rare to medium-rare. Using an instant-read thermometer, pull the tenderloin off the heat when it hits an internal temperature of 125°F to 130°F. Remember that carry-over cooking will raise the temperature another 5 degrees while it rests.
6. The Mandatory Rest
Let the meat rest on a cutting board or warm plate for at least 8–10 minutes. This allows the internal juices to redistribute throughout the muscle fibers. If you slice into it too early, those juices will run out, leaving you with dry meat.

- Avoid Overcooking: Lean wild game lacks the intramuscular fat (marbling) of grain-fed beef. Because of this, it dries out quickly once you push past medium-rare. Always rely on a digital thermometer rather than "guesstimating" by touch.
