Old-Fashioned Squirrel and Dumplings: A Hunter’s Comfort Classic

Rediscovering the Squirrel: A Culinary Heritage
For many, squirrel hunting is the quintessential introduction to the woods. It is a slow, methodical pursuit that demands patience, keen observation, and marksmanship. Beyond the trophy, the squirrel provides some of the cleanest, most flavorful lean protein in the forest. Often overlooked in modern kitchens, squirrel meat is remarkably similar to rabbit or dark-meat chicken, making it the perfect candidate for long, slow braises. At Buckeye Hunter Hub, we believe that every ounce of a successful harvest deserves to be showcased with care, and there is no better way to honor the squirrel than with a pot of traditional, hand-rolled dumplings.

Why Squirrel Needs a Gentle Touch
Unlike the fatty cuts of beef or pork, squirrel is exceptionally lean. If you rush the cooking process, the meat can become tough and stringy. To achieve that melt-in-your-mouth texture, you must utilize the 'low and slow' method. Braising the squirrel in a seasoned broth breaks down the connective tissues, resulting in a rich, tender meat that falls away from the bone with the slightest nudge of a fork. Think of your squirrel like a heritage bird; it requires respect, patience, and just the right amount of moisture to truly shine.

1. Preparation and Brining
Start by soaking your squirrel quarters in a salt-water brine for at least two hours—or overnight if time permits. This step helps draw out any gaminess and seasons the meat thoroughly. Once brined, pat the meat dry with paper towels. Season lightly with salt and pepper.
2. Sear for Depth
In a heavy-bottomed Dutch oven, fry the bacon until crispy. Remove the bacon bits but leave the rendered fat. Working in batches, sear the squirrel pieces until golden brown. This Maillard reaction is critical for building a deep, complex flavor profile that will define your final gravy.
3. The Slow Simmer
Add your vegetables to the pot, sautéing until translucent. Deglaze the bottom of the pot with a splash of stock, scraping up those flavorful brown bits. Return the squirrel and bacon to the pot, add the remaining stock, thyme, and bay leaves. Cover and simmer on low for 90 to 120 minutes. You want the meat to be very tender, almost ready to fall off the bone.

4. Creating the Dumplings
While the squirrel is simmering, whisk together the flour, baking powder, and salt. Gently stir in the milk and melted butter until just combined; do not overmix, or your dumplings will become dense. Drop spoonfuls of the batter directly into the simmering pot. Cover tightly and let them steam for 15 minutes without peeking. The steam is what makes them light and pillowy.
Chef Tips for Wild Game Success
- Temperature Control: Never boil your squirrel aggressively. A steady, gentle simmer is the secret to keeping the meat succulent. If the broth boils too hard, the meat will seize and toughen.
- Deboning: If you prefer a meal that is easier to eat, shred the squirrel meat off the bone once it is tender, discard the bones, and return the meat to the pot before adding the dumplings. This makes for a more refined, 'stew-like' experience.
- Beyond the Kitchen: As you plan your next outing, check the to ensure you are targeting your game during the optimal season. Quality in the field always leads to better quality on the dinner plate.
