From Field to Table: The Art of Venison Sausage
For many of us at Buckeye Hunter Hub, the success of a season isn't just measured by the size of the rack on the wall; it is measured by the quality of the harvest that feeds our families. Venison is an incredibly lean, healthy protein, but its lack of fat makes it tricky to work with. Nowhere is this more apparent than when making summer sausage. If you treat it like beef, you end up with a dry, crumbly mess. But when you master the blend of fats, seasonings, and smoking temperatures, you produce a shelf-stable, savory snack that will be the highlight of your next backcountry excursion or post-hunt gathering.
Understanding Your Cut
Whether you were tracking a buck during the peak of the rut—using our as a guide—or simply filling the freezer with an antlerless tag, the secret to great sausage starts with the grind. Because venison is so lean, you must supplement it with pork fat. A ratio of 80% venison to 20% pork fat (or pork shoulder) is the gold standard. If you use less fat, the sausage will dry out during the smoking process. If you use too much, it will feel greasy on the palate.
Ingredients
- 5 lbs venison trim, chilled
- 1.25 lbs pork back fat or fatty pork shoulder
- 2 tbsp Morton Tender Quick (or a curing salt mix like Prague Powder #1)
- 3 tbsp black pepper, freshly cracked
- 2 tbsp mustard seed
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp brown sugar
- 1 tsp ground nutmeg
- 1 cup ice-cold water
The Step-by-Step Process
1. Preparation is Key
Keep everything cold. I cannot stress this enough. If the fat smears during the grinding process, the emulsion will break, and the fat will melt out in the smoker, leaving you with dry sausage. Chill your grinder parts, your meat, and your fat in the freezer for 30 minutes before you start. Cut your meat and fat into 1-inch cubes that fit your grinder throat easily.

2. The Grind
Grind your venison and fat together using a coarse die. If you prefer a finer texture, run it through a second time using a medium die. After grinding, mix the meat, spices, and ice-cold water in a large stainless steel bowl. Knead the mixture for at least 5 to 7 minutes by hand or in a stand mixer. You are looking for a 'tacky' consistency where the meat sticks to your hand. This indicates the proteins have developed properly, which will keep your sausage firm.
3. Stuffing the Casings

Load your mixture into a sausage stuffer. Fibrous casings are the industry standard for summer sausage because they are permeable, allowing the smoke to penetrate the meat while holding the sausage together during the long heating process. Tighten the casings as you stuff, ensuring there are no air pockets. Twist the ends and tie them securely with butcher's twine.
4. The Smoke and Cook
Preheat your smoker to 160°F. Avoid jumping straight to high heat, as you need to slowly bring the internal temperature of the sausage up to 152°F to be safe for consumption. Place the links on the smoker racks, ensuring they aren't touching. Add your favorite smoking wood—hickory or apple work exceptionally well with venison—and let them smoke for 4 to 6 hours.
Chef Tips for Success
- Monitor Internal Temperature: Do not rely on time alone. Use a reliable digital meat thermometer to track the center of the largest link. Pull the meat from the smoker exactly at 152°F.
- The Ice Bath: Once the sausage reaches 152°F, immediately submerge the links in an ice water bath. This stops the cooking process and prevents 'shriveling' of the casing. It also helps 'set' the fat, which improves the snap and texture of the final product.
- Resting: Let your sausage bloom and rest in the refrigerator for at least 24 hours before slicing. This allows the spices to permeate the meat and the texture to stabilize.
