Because wild dove breast is incredibly lean—almost devoid of fat—it can go from tender to leather-like in a matter of seconds. High, direct heat is your enemy if you aren't paying attention. The key to the perfect popper is using a wrap of bacon. The bacon provides the necessary fat to baste the meat from the outside in, ensuring the dove remains succulent while the exterior reaches that perfect level of crispness.

  • 12-16 fresh dove breasts, cleaned and de-boned
  • 6-8 slices of thick-cut bacon, halved
  • 1 fresh jalapeño, sliced into rounds (remove seeds for less heat)
  • 4 oz cream cheese, softened
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • Fresh cracked black pepper to taste
  • Optional: A splash of Worcestershire sauce or your favorite BBQ rub

Step-by-Step Instructions

1. Preparation and Brining

Start by soaking your cleaned dove breasts in a bowl of ice-cold water with a tablespoon of salt for about one hour. This helps draw out any remaining blood and ensures a clean, gamey-neutral flavor. Pat the breasts completely dry with paper towels before proceeding.

2. The Stuffing Process

Lay out your dove breasts. Take a small dollop of cream cheese and spread it on the meaty side of each breast. Press a slice of jalapeño into the cream cheese. If you enjoy a bit of extra kick, sprinkle a dash of your favorite dry BBQ rub directly onto the cheese before closing the meat back up.

3. The Bacon Wrap

Take a half-slice of bacon and wrap it snugly around the dove breast. Secure the bacon with a soaked toothpick. The goal is to keep the bacon tight so that as it renders, it bastes the meat perfectly. Avoid over-stuffing, or the bacon won't hold the assembly together on the grill grates.

4. Grilling to Perfection

Preheat your grill to medium-high heat (about 375°F). You want enough heat to crisp the bacon, but not so much that you trigger flare-ups. Place the poppers on the grill and cover. Cook for approximately 8 to 10 minutes, turning them every 2-3 minutes to ensure even browning. Keep a spray bottle of water handy in case of bacon fat flare-ups.

  • Monitor the Temp: Use an instant-read meat thermometer if you are nervous. You are looking for an internal temperature of about 145°F to 150°F. Because these are small cuts, they cook fast—do not walk away from the grill!
  • Toothpick Trick: Always soak your wooden toothpicks in water for at least 20 minutes before using them. This prevents them from catching fire and turning to ash on the grill.
  • Resting: Let your poppers rest for 3-5 minutes after pulling them off the heat. This allows the juices to redistribute, ensuring that the first bite is just as tender as the last.
