Mastering Homemade Venison Summer Sausage: A Field-to-Table Guide

Why Make Your Own Summer Sausage?
For many of us at Buckeye Hunter Hub, the success of the season is measured not just in trophy photos, but in the freezer inventory. If you find yourself staring at a stash of venison trim or tougher roasts from a late-season doe, you have the perfect starting point for summer sausage. This savory, shelf-stable, and incredibly versatile meat product is the crown jewel of venison processing. While many hunters send their meat to commercial processors, crafting your own ensures you know exactly what is going into the mix—and it lets you dial in the spice levels to your exact preference.

The Anatomy of the Sausage
Venison is inherently lean. When making summer sausage, the secret to avoiding a dry, crumbly texture is fat. You are aiming for a ratio of approximately 20% to 30% pork fat. High-quality pork butt or dedicated pork fatback works best. Do not be tempted to skip this; without the fat, the sausage will lack that signature 'snap' and mouthfeel.
The Essential Ingredients
To make approximately 10 pounds of sausage, gather the following:
- 7 lbs lean ground venison
- 3 lbs fatty pork shoulder (or pork fatback)
- 2 tbsp Kosher salt
- 2 tsp Prague Powder #1 (Curing Salt - essential for safety)
- 2 tbsp black pepper (coarsely ground)
- 1 tbsp mustard seed
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp sugar or maple syrup to balance the smoke
- 1 cup ice-cold water
- Sausage casings (fibrous casings are standard for summer sausage)
Step-by-Step Preparation
1. Preparation and Tempering
Keep your meat cold. This is the golden rule of sausage making. If the fat smears during grinding, it will melt out during the cooking process, leaving you with dry sausage. Cut your venison and pork into one-inch chunks, mix them together, and keep them in the freezer for about 30 minutes until they are firm but not frozen solid.

2. The Grind
Run the meat mixture through a coarse grinder plate first. If you want a finer texture, do a second pass with a medium plate. If you are struggling to process your harvest, check out our to find local processing tips or facilities if you ever need a hand with the heavy lifting.
3. Mixing and Curing

Place the ground meat in a large stainless steel bowl. Add your spices and the Prague Powder #1. Pour in the ice water. Using your hands, mix the meat vigorously for 5 to 7 minutes. You are looking for the mixture to become tacky and sticky—this proteins binding effect is what keeps the sausage together.
4. Stuffing
Pack the mixture into your sausage stuffer tightly to ensure there are no air pockets. Fill the fibrous casings, twisting the ends securely with hog rings or butcher’s twine. If you notice any air bubbles, prick them with a clean needle.
5. Smoking and Cooking
Preheat your smoker to 160°F. If you don't have a smoker, an oven set at its lowest setting with a pan of liquid smoke can suffice, though a real wood fire is superior. Smoke the logs until the internal temperature of the meat reaches 152°F. This slow process allows the smoke to penetrate while the heat renders the fat perfectly.
Expert Tips for the Home Chef
- Temperature Control is Everything: Never rush the smoking process by cranking the heat. High heat will render out the fat too quickly, leaving you with a dry log of meat. Patience is your best seasoning.
- The Cold Water Bath: Once the internal temp hits 152°F, remove the sausages and immediately plunge them into a bath of ice water. This stops the cooking process instantly and prevents the casing from wrinkling.
- Bloom Time: Let the sausages 'bloom' at room temperature for an hour after the ice bath. This allows the color to set and the flavors to meld. Afterward, place them in the refrigerator overnight before slicing.
A Final Word on Quality
Making your own sausage is a craft that bridges the gap between field and table. Whether you are prepping for a long winter or just looking for a better way to utilize your harvest, this recipe delivers.
