- 1 cup celery, chopped
- 8 oz cremini mushrooms, sliced
- 1/2 cup all-purpose flour
- 1 cup heavy cream or whole milk
- 1 cup frozen peas
- 2 tablespoons fresh thyme
- Salt and cracked black pepper to taste
- 1 package store-bought puff pastry or pie crust
- 1 egg (for egg wash)
The Preparation Process
1. Poach the Bird
In a medium pot, bring your stock to a low simmer. Add the pheasant breasts. Poach them gently for about 12-15 minutes or until an internal temperature reaches 160°F. Remove the meat, let it cool, and shred it into bite-sized pieces. Reserve the poaching liquid—it is liquid gold for your gravy base.
