Field to Jerky: The Ultimate Guide to Wild Goose Jerky

Why Goose Makes the Best Jerky
Many hunters view Canada geese as a challenge to cook properly. Because goose breast is incredibly lean and possesses a deep, iron-rich flavor, it can easily become tough or 'liver-y' if prepared as a standard steak. However, those exact characteristics make it the perfect candidate for high-quality jerky. When properly sliced, marinated, and dried, goose breast transforms into a tender, savory snack that rivals any store-bought beef jerky. At Buckeye Hunter Hub, we believe that every bird harvested should be treated with respect and turned into something delicious.

Understanding the Meat
Goose meat is exceptionally lean, with almost no intramuscular fat. While this is great for health, it means you have to be careful with your processing. Unlike beef, which has fat marbling to keep it moist, wild goose must be handled with precision to prevent it from becoming brittle or overly dry. Before you begin your recipe, ensure you have checked the latest for your region, as your success in the field often depends on understanding the movement of these birds throughout the season.
The Preparation Process
Ingredients
- 2 lbs skinless, boneless Canada goose breast
- 1/2 cup soy sauce
- 1/4 cup Worcestershire sauce
- 1 tbsp liquid smoke
- 2 tsp freshly cracked black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp brown sugar
- 1/2 tsp red pepper flakes (optional for heat)
Step-by-Step Instructions
- Trim and Clean: Start by removing every bit of silver skin, connective tissue, and fat from the goose breast. Any fat left on the meat will go rancid during the dehydration process and shorten the shelf life of your jerky.
- The Slice: For the best texture, slice your goose breast against the grain into 1/4-inch thick strips. Using a very sharp knife is essential. Pro tip: freeze the breasts for about 60-90 minutes before slicing. This firms the meat up, making it significantly easier to get uniform strips.
- Marinate: Whisk all the marinade ingredients together in a large bowl or sealable plastic bag. Add your meat, ensure every piece is thoroughly coated, and refrigerate for 8 to 24 hours. The longer it sits, the deeper the flavor will penetrate.
- Dry: Remove the strips from the marinade and pat them dry with paper towels. Lay them flat on your dehydrator racks, ensuring they don't touch or overlap. Set your dehydrator to 160°F (71°C). Most goose jerky will take between 4 and 6 hours, depending on the thickness of your strips and the humidity of your home.
- Check for Doneness: You are looking for a finish where the meat bends and cracks but doesn't snap completely in two. If it shatters when bent, it is over-dried.

Working with wild game requires a different mindset than picking up a package of fatty farm-raised beef. Because goose lacks fat, it doesn't have a 'buffer' against overcooking. If you dry it too long, it loses its chew and becomes brittle. Start checking your jerky at the 3-hour mark. If you are new to the kitchen side of the sport, you can find more tips on field-to-table techniques on .
Temperature management is also critical. Always ensure your dehydrator reaches an internal temperature of at least 160°F to ensure any potential bacteria present from field dressing are neutralized. If your machine runs hot or cold, use a separate oven thermometer to verify the actual temperature.
Storing Your Jerky

Once your jerky is finished, let it cool completely to room temperature before packing it away. Moisture condensation inside a bag will cause your hard work to spoil quickly. Store it in vacuum-sealed bags or airtight mason jars. For long-term storage, keep it in the refrigerator, where it will stay fresh for months.
